The lemon plant is a hybrid between citron and bitter orange or grapefruit. Its origins can be traced back to the Far East, particularly China. However, lemons were already known in the Western world during Roman times, as evidenced by frescoes found in Pompeii. But, it was not until after 1400 that lemons were first cultivated in Europe, specifically in Genoa (Italy). Later, Christopher Columbus would bring them to the New World. Today, lemon cultivation is widespread throughout the Mediterranean basin.

The lemon tree is a small fruit plant, typically reaching a height of no more than 5-6 meters. It displays beautiful white blossoms that bloom twice a year. In fact, lemon trees flower in spring, and the fruits are harvested during autumn and winter. Then, they flower again in autumn, allowing the fruits to ripen the following summer. Like many fruit trees, lemons come in various varieties. Among them, the most prevalent types in Italy are the Sorrento lemon, the Amalfi Coast lemon, the Corsican lemon, and the Siracusa lemon.
